Taquitos

I have the shredded beef and corn tortillas from Monday, so what to do? Make taquitos! A roll of shredded beef, a crispy shell of corn tortilla. Not something to eat everyday, but delicous nonetheless!

Preheat some oil in a cast iron skillet.

Warm the tortillas in a pan to soften them up, if you don't the corn tortillas will split.





Once warm, add a couple tablespoons of shredded beef. Roll up.





Place seam side down in hot oil.



Fry until crisp, remove to paper towels, to allow to drain.

Garnish with Cilantro and  Cheese. Serve.
